Raw Food Diet: Some Vegans Swear by It, Dieticians Warn of Dangers
Vegetarianism is a term that is often used quite loosely among those who are your typical herbivores. But the vegetarian eating lifestyle has its most strict following by people who call themselves vegans. Most broad-based vegetarians keep quite a wide food selection open for the pallet compared to vegans. They will eat some animal products such as cheese, eggs and milk. Vegans on the other hand omit any animal product made from milk and cheese to even bee’s honey. In the past several years vegans have upped the bar with an more restricted diet that omits cooking altogether, which is the raw food diet. The raw food diet is essentially the same as what vegans eat except with one caveat. All food must be eaten without strong heat applied. The temp cannot go over 112 degrees Fahrenheit as to preserve the natural enzymes that are in the plant’s cell structure.

Following a raw, or mostly raw, diet in the United States is easy in some ways and difficult in others. On the one hand, fresh produce is available year round because of a highly developed logistical system as well as numerous greenhouse growers. However, it is common knowledge that the U.S. has the highest concentration of overweight and obese people. Moreover, in the U.S. for many it is almost a sacrilege to refuse to eat meat or cheese. Meat is the staple food in America. So from an interpersonal relationship standpoint, staying raw in America is more difficult that doing so in other countries. I have lived in China for the previous year, and while I am not following a 100% raw food diet, I do follow a mostly raw entirely vegan diet and am constantly seeking to increase my consumption of raw foods and vegetables.
